Thermometers

Cooking and food thermometers from Taylor and OXO: instant-read digital and analog, digital probe thermometers, candy thermometers and dial thermometers. Instant-read and leave-in probe are two different tools — an instant-read is pulled out between checks and gives a fast spot reading, a probe thermometer stays in the food with the lead running out of the oven so you never open the door. Candy thermometers cover a much higher range than meat thermometers and clip to the pan, and a meat thermometer will simply top out in a sugar syrup. Digital reads faster and finer; a dial thermometer has no battery to fail and needs recalibrating in ice water now and then, which is worth doing on any of them.
